Kachori, Suji Ka Halwa, Channay ki Tarkari&Aalo Ki Tarkari Recipe in English:

Ingredient:

•Flour 2cups
•Salt ½ tsp or to taste
•Oil ¼ cup
•Water as required
Kachori filling:
•Yellow lentil ½ cup (boiled and grinded)
•Green chili chopped 1
•Fennel crushed ½ tsp (crushed)
•Red chili powder ½ tsp
•All spice powder ¼ tsp
•Cumin powder ½ tsp
•Coriander chopped 2 tbs
•Garlic powder ½ tsp
•Salt 1 tsp

Directions:

-In bowl, add flour, salt and oil, knead well.
-Add water (as required) and Knead well to a smooth dough.
-Cover and leave for 15mins.
-Knead again. Dough is ready.
Kachori filling:
-Wash lentil, soak for 15 mins, boil and grind it.
-In yellow lentill, add green chili (chopped), fennel seeds (crushed), red chili powder, all spice powder, cumin powder, garlic, coriander (chopped), garlic powder and mix it.
-Add salt and mix well.
-Divide dough, flatten,add filling and deep fry on low flame.

Recipe in Urdu:

Ajza:

• Maida 2cups
• Namak ½ tsp or to taste
• Oil ¼ cup
• Pani hasb e zarooart
Kachori filling:
• Moong daal ½ cup
• Hari mirch chopped 1
• Saunf crushed ½ tsp
• Lal mirch ½ tsp
• Garam masala ¼ tsp
• Zeera ½ tsp
• Lehsan powder ½ tsp
• Hara dhania chopped 2 tbs
• Namak 1 tsp

Directions:

-Ek Bowl mein maida,namak aur tel dal ker ghond lein.
-Hasb e zarooart pani dal ker ache tarhan ghond lein yahan tak k dough tayyar ho jaye.
-Dhak ker 15 mins kliya rakh dein.
-Isko ek dafa aur haath se goondh lein, dough tayyar hai.
Kachori filling:
-Moong daal ko dho ker 15 mins kliya bhego dein,ubal ker grind ker lein.
-Ab moong daal mein hari mirch,saunf,lal mirch,garam masala,zeera,lehsan powder aur hara dhania (chopped)dal ker mix ker lein.
-Ab namak shamil karein aur ache tarhan mix ker lein.
-Dough k hissay kerlein,hamwaar bana ker is mein filling bhar dein,halki annch per deep fry ker lein.

Recipe in English:

Ingredients:

Semolina 125 gms (roasted)
Ghee 1 cup
cardamom 2-3
water 2 cup
yellow food color ½ tsp
sugar 1 cup

Directions:

In fry pan,add semolina and roast on medium flame for 6-8 mins,set aside
Heat ghee in a wok,add cardamom and roasted semolina,saute little
Carefully add water
Now add yellow food color and mix well
In the end,add sugar and give it a good mix
Cook until sugar dissolve and oil separates
Remove excess oil if required.

Ajza:

Sooji 125 gms (roasted)
Ghee 1cup
Elaichi 2-3
Pani 2cup
Zarde ka rang 1/2tsp
Cheeni 1cup

Directions:

Fry pan mein sooji dal ker halki annch per 6-8 mins kliya bhoon lein aur side per rakha dein
Karhai mein ghee dal ker melt ker lein,ab is mein elaichi aur sooji (roasted) dal ker saute ker lein
Ab is mein pani ehtiyat sa shamil karein
Zarde ka rang dal ker mix ker lein
Akhir mein cheeni shamil karein aur ache tarhan mix ker lein
Is ko itna paka lein k cheeni ghul jaye aur tel alag ho jaye
Agar zaroorat ho toh ezafi tel nikal lein.

Ingredients:

-Oil 3 tbs
-Onion finely chopped 1
-Tomato grinded 1
-Garlic paste 1 tbs
-Ginger paste ½ tbs
-Red chili powder 1 tsp
-Turmeric 1 pinch
-All spice powder ¼ tsp
-Salt to taste
-Green chili 3-4
-Water 2-3 tbs
-Chickpeas boiled 1 & ½ cup
-Water 1 & ½ cup
-Cumin powder ½ tsp
-Green coriander 2 tbs
-Green chili 1-2

Directions:

-In a pan,add oil,onion (finely chopped),tomato grinded,mix it.
-Now add garlic paste,ginger paste,red chilli powder,turmeric,all spice powder,salt,green chilli chopped and mix.
-Add little water and mix it.
-Add chickpeas (boiled) and give it a good mix.
-Gradually add water and mix constantly.
-In the end,add cumin powder,green coriander and green chilies.
-Serve with kachori and suji ka halwa.

Recipe in Urdu:

Ajza:

-Pyaz finely chopped 1
-Tamatar grinded 1
-Lehsan 1 tbs
-Adrak ½ tbs
-Kuti lal mirch 1 tsp
-Haldi 1 pinch
-Garam masala ¼ tsp
-Namak to taste
-Hari mirch 3-4
-Pani 2-3 tbs
-Chanay boiled 1 & ½ cup
-Pani 1 & ½ cup
-Zeera ½ tsp
-Hara dhania 2 tbs
-Hari mirch 1-2

Directions:

-Pan mein oil,pyaz (finely chopped),tamatar (grinded) shamil karein aur mix karein.
-Ab is mein lehsan paste,adrak paste,kuti lal mirch,haldi,garam masala powder,namak,hari mirch(chopped) shamil karein aur mix ker lein.
-Thora pani dalein aur mix kerein.
-Ab is mein ublay hoye channay shamil karein aur ache tarhan mix ker lein.
-Thora thora ker k pani shamil karein.
-Akhir mein zeera powder,hara dhaniya aur hari mirchein (chopped)dalein.
-Kachori aur suji ka halway k saath serve karein.
